Tomato-Peach Preserves

Love the taste of homemade preserves, but hate the hassle of canning all day?? This is the recipe for you - fresh tomatoes and peaches mixed with fresh herbs and cooked to make a great spread for breads or topping for grilled chicken, pasta, or anything you like. Maybe even make it a new selection on your cheese board for you next dinner party.

Instructions

  1. Stir together all ingredients except rosemary and pepper in 4 qt. microwave safe glass bowl
  2. Microwave on high for 8 minutes (mixture will boil), stir, and microwave on high 12-16 minutes or until thickened like the consistency of pancake syrup.
  3. Will thicken more as it cools
  4. Stir rosemary & pepper into warm preserves.
  5. Cool completely (about 2 hours).
  6. Serve immediately or cover and chill.
  7. Store in airtight container in refrigerator up to 3 weeks.
