Love the taste of homemade preserves, but hate the hassle of canning all day?? This is the recipe for you - fresh tomatoes and peaches mixed with fresh herbs and cooked to make a great spread for breads or topping for grilled chicken, pasta, or anything you like. Maybe even make it a new selection on your cheese board for you next dinner party.

Ingredients
- 2 1/4 cup peeled, diced peaches about 1 1/4 lb
- 2 1/4 cup seeded & diced plum tomatoes
- 1 1/2 cup sugar
- 3 Tbsp fresh lemon juice (store bought is fine)
- 1 1.75 oz package powdered pectine
- 1 1/2 tsp mince fresh rosemary if using dried rosemary just use 1/2 teaspoon
- 1/2 tsp ground pepper
Instructions
- Stir together all ingredients except rosemary and pepper in 4 qt. microwave safe glass bowl
- Microwave on high for 8 minutes (mixture will boil), stir, and microwave on high 12-16 minutes or until thickened like the consistency of pancake syrup.
- Will thicken more as it cools
- Stir rosemary & pepper into warm preserves.
- Cool completely (about 2 hours).
- Serve immediately or cover and chill.
- Store in airtight container in refrigerator up to 3 weeks.
