Sweet Tea Rice with Jalapenos, Peaches, and Pecans

This rice is a party of flavors, and is super versatile. It's a great side dish with lots of extras or add a grilled chicken breast and you have a full meal.

Instructions

  1. bring tea to a boil in a 3 qt. saucepan over medium-high heat; stir in rice and 1/2 tsp salt.
  2. Cover, reduce heat to low, and simmer 20 minutes or until tea is absorbed and rice is tender.
  3. Meanwhile, melt butter in a large skillet over medium heat; add pecans, and cook, stirring often, 3-4 minutes or until toasted and fragrant.
  4. Add jalapeno, and saute for 1 minutes.
  5. Stir in hot cooked rice, diced fresh peach, chives, salt, and pepper.
