Perfect for a quick breakfast on the go or a nice accoutrement to any brunch. These muffins are filling, delicious, and full of wonderful peach flavor. Can be made in and out of season.

Ingredients
- 2 cups sifted all purpose flour
- 1/2 cup sugar
- 3 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/3 cup vegetable oil or shortening
- 1 egg, slightly beaten
- 1 cup diced peaches canned or fresh
Servings: muffins
Instructions
- Preheat oven at 400 F, grease bottoms of cupcake pans or use cupcake liners.
- Mix all ingredients and add peaches last mix well. Batter will be lumpy
- Fill cups 1/2 full of batter.
- Bake 20-25 minutes or until golden brown * toothpick comes out clean.
