Peach Enchiladas

Despite the name, this is one sweet dish! A unique blend of Mexican and French cuisine with a wonderful Peach flavor will excite your taste buds. This peach enchilada will remind you of a churro, a crepe, and empanada all in one!

Instructions

  1. Mix sauce ingredients & stir
  2. Bring to a boil & boil 2 minutes.
  3. Mix pie filling and cut up apricots. divide fruit mix into tortillas.
  4. Roll & place in a 9x13 pan.
  5. Pour sauce over & let sit a couple hours or in the refrigerator overnight.
  6. Sprinkle with Cinnamon, sugar, and nutmeg.
  7. Bake at 350 F covered for 30 minutes. Uncover & bake 10-15 minutes. Serve warm
