Despite the name, this is one sweet dish! A unique blend of Mexican and French cuisine with a wonderful Peach flavor will excite your taste buds. This peach enchilada will remind you of a churro, a crepe, and empanada all in one!

Ingredients
Enchiladas
- 10-12 flour tortillas
- 1 can peach pie filling
- 1 can apricots, drained
Sauce
- 1-1/2 stick butter
- 1-1/2 cup sugar
- 2 Tbsp lemon juice
- 1/4 tsp salt
- 1-1/2 cups drained apricot juice add water if not enough to make 1-1/2 cups

Instructions
- Mix sauce ingredients & stir
- Bring to a boil & boil 2 minutes.
- Mix pie filling and cut up apricots. divide fruit mix into tortillas.
- Roll & place in a 9x13 pan.
- Pour sauce over & let sit a couple hours or in the refrigerator overnight.
- Sprinkle with Cinnamon, sugar, and nutmeg.
- Bake at 350 F covered for 30 minutes. Uncover & bake 10-15 minutes. Serve warm
