This salad is the perfect quick family dinner. Super healthy, great flavor, and all the major food groups come together in this wonderful summertime salad. It’s just begging to be on your table tonight.

Ingredients
- 2 peaches
- 2 cups grilled chicken chopped
- 1/2 cup red onion thinly sliced
- 1/2 cup poppy seed dressing
- 6 cups mixed salad greens
- 1/2 cup pecans toasted & chopped

Instructions
- Chop pecans and place in shallow baking sheet. Place in oven at 350 degrees and toast for about 10-12 minutes or until fragrant.
- Salt and pepper chicken place on grill heated to 350-400 degrees. Grill on both sides about 6-8 minutes per side until grill marks appear or until done through. Chop and put to the side.
- Chop 1 peach into 1/2 inch pieces; place in a large bowl.
- Add chicken and onions. Toss with dressing to coat.
- Add greens and pecans to bowl and toss to coat.
- Mound salad on large plate. Cut remaining peach in thin wedges and place on top to garnish.
